Ingredients

  • 2 large Cucumbers, chunked
  • 4 large Tomatoes, cut in wedges
  • 1 medium Red onion, thinly sliced
  • 1 cup Kalamata olives
  • 8 oz Feta cheese, cubed
  • 0.33 cup Extra virgin olive oil
  • 2 tbsp Red wine vinegar
  • 1 tsp Dried oregano
  • 1 to taste Salt and pepper

Instructions

  1. Combine cucumbers, tomatoes, onion, and olives in a large bowl.
  2. In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.
  3. Pour dressing over vegetables and toss gently.
  4. Top with feta cheese cubes.
  5. Let sit for 10 minutes before serving to allow flavors to meld.

Tips & Notes

Traditional Greek salad doesn't include lettuce - it's all about the vegetables and feta!
