Mix spinach, feta, cream cheese, garlic, and Italian seasoning in a bowl.

Cut a pocket into the thick side of each chicken breast.

Stuff each pocket with spinach mixture and secure with toothpicks.

Season outside of chicken with salt and pepper.

Heat olive oil in oven-safe skillet. Sear chicken for 3 minutes per side.

Transfer skillet to oven and bake for 20 minutes until chicken reaches 165°F.
