Ingredients

  • 1.5 lbs Chicken breasts
  • 8 cups Chicken broth
  • 3 medium Carrots, sliced
  • 3 stalks Celery, chopped
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 8 oz Egg noodles
  • 2 whole Bay leaves
  • 1 tsp Fresh thyme
  • 1 to taste Salt and pepper

Instructions

  1. Bring chicken broth to a boil in a large pot.
  2. Add chicken breasts, bay leaves, and thyme. Reduce heat and simmer for 20 minutes.
  3. Remove chicken, shred it, and set aside.
  4. Add carrots, celery, onion, and garlic to the broth. Simmer for 10 minutes.
  5. Add egg noodles and cook for 8-10 minutes until tender.
  6. Return shredded chicken to pot and heat through.
  7. Remove bay leaves, season with salt and pepper, and serve hot.

Tips & Notes

Use rotisserie chicken for a super quick version - just add it at the end to warm through!
