1.5 lbs Chicken breasts

8 cups Chicken broth

3 medium Carrots, sliced

3 stalks Celery, chopped

1 medium Onion, diced

3 cloves Garlic, minced

8 oz Egg noodles

2 whole Bay leaves

1 tsp Fresh thyme

1 to taste Salt and pepper

Instructions
- Bring chicken broth to a boil in a large pot.
- Add chicken breasts, bay leaves, and thyme. Reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and set aside.
- Add carrots, celery, onion, and garlic to the broth. Simmer for 10 minutes.
- Add egg noodles and cook for 8-10 minutes until tender.
- Return shredded chicken to pot and heat through.
- Remove bay leaves, season with salt and pepper, and serve hot.
