Ingredients

  • 2 tbsp Olive oil
  • 1 large Onion, diced
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 4 cloves Garlic, minced
  • 28 oz can Crushed tomatoes
  • 6 cups Vegetable broth
  • 15 oz can Cannellini beans
  • 1 cup Small pasta shells
  • 2 cups Spinach
  • 2 tsp Italian seasoning

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened, about 8 minutes.
  3. Add garlic and Italian seasoning, cook for 1 minute.
  4. Pour in crushed tomatoes and vegetable broth. Bring to a boil.
  5. Add beans and pasta. Simmer for 15 minutes until pasta is cooked.
  6. Stir in spinach and cook until wilted, about 2 minutes.
  7. Season with salt and pepper. Serve with crusty bread and parmesan.
