1 large Onion, diced

2 medium Carrots, diced

2 stalks Celery, diced

4 cloves Garlic, minced

28 oz can Crushed tomatoes

6 cups Vegetable broth

15 oz can Cannellini beans

1 cup Small pasta shells

2 cups Spinach

2 tsp Italian seasoning

Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until softened, about 8 minutes.
- Add garlic and Italian seasoning, cook for 1 minute.
- Pour in crushed tomatoes and vegetable broth. Bring to a boil.
- Add beans and pasta. Simmer for 15 minutes until pasta is cooked.
- Stir in spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper. Serve with crusty bread and parmesan.
