  • 1 lb Pasta

    Zucchini noodles ยท 1:1 ratio โ€” Low-carb; spiralize fresh zucchini; cook briefly
  • 2 cups Fresh basil leaves
  • 0.33 cup Pine nuts
  • 0.5 cup Parmesan cheese, grated
  • 3 whole Garlic cloves
  • 0.5 cup Extra virgin olive oil
  • 1 tbsp Lemon juice
  • 0.5 tsp Salt

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup pasta water.
  2. In a food processor, combine basil, pine nuts, Parmesan, and garlic.
  3. Pulse until finely chopped.
  4. With processor running, slowly drizzle in olive oil until smooth.
  5. Add lemon juice and salt. Pulse to combine.
  6. Toss hot pasta with pesto, adding pasta water as needed to reach desired consistency.
  7. Serve immediately with extra Parmesan and pine nuts.

Tips & Notes

Toast the pine nuts before making the pesto for extra depth of flavor!
