Ingredients

  • 2 heads Romaine lettuce, chopped
  • 3 whole Garlic cloves
  • 4 whole Anchovy fillets
  • 1 whole Egg yolk
  • 1 tsp Dijon mustard
  • 2 tbsp Lemon juice
  • 0.5 cup Olive oil
  • 1 cup Parmesan cheese, grated
  • 2 cups Croutons
  • 0.5 tsp Black pepper

Instructions

  1. Mince garlic and anchovies together until paste-like.
  2. In a bowl, whisk together garlic-anchovy paste, egg yolk, mustard, and lemon juice.
  3. While whisking constantly, slowly drizzle in olive oil until dressing is thick and creamy.
  4. Stir in half of the Parmesan cheese and season with black pepper.
  5. Toss romaine lettuce with dressing until well coated.
  6. Top with croutons and remaining Parmesan. Serve immediately.
