Classic Caesar Salad with Homemade Dressing

2 heads Romaine lettuce, chopped

3 whole Garlic cloves

4 whole Anchovy fillets

1 whole Egg yolk
-
1 tsp Dijon mustard

2 tbsp Lemon juice

0.5 cup Olive oil

1 cup Parmesan cheese, grated

2 cups Croutons

Instructions
- Mince garlic and anchovies together until paste-like.
- In a bowl, whisk together garlic-anchovy paste, egg yolk, mustard, and lemon juice.
- While whisking constantly, slowly drizzle in olive oil until dressing is thick and creamy.
- Stir in half of the Parmesan cheese and season with black pepper.
- Toss romaine lettuce with dressing until well coated.
- Top with croutons and remaining Parmesan. Serve immediately.
