Ingredients

  • 1 loaf Baguette, sliced
  • 4 large Ripe tomatoes, diced
  • 0.25 cup Fresh basil, chopped
  • 3 whole Garlic cloves
  • 0.33 cup Extra virgin olive oil
  • 1 tbsp Balsamic vinegar
  • 1 to taste Salt and pepper

Instructions

  1. Preheat oven broiler. Arrange baguette slices on a baking sheet.
  2. Brush bread with olive oil and broil until golden, about 2 minutes per side.
  3. Rub toasted bread with a cut garlic clove while still warm.
  4. In a bowl, combine diced tomatoes, basil, remaining garlic (minced), olive oil, and balsamic.
  5. Season tomato mixture with salt and pepper.
  6. Spoon tomato mixture onto toasted bread just before serving.

Tips & Notes

Use ripe, in-season tomatoes for the best flavor. Don't skip rubbing the garlic on the toasted bread!
