  • 2 whole Ripe avocados
  • 4 whole Fresh eggs
  • 1 tbsp Lemon juice
  • 0.5 tsp Red pepper flakes
  • 1 to taste Salt and pepper to taste
  • 0.25 cup Microgreens for garnish

Instructions

  1. Toast sourdough slices until golden and crispy.
  2. Mash avocados in a bowl with lemon juice, salt, and pepper.
  3. Bring a pot of water to a gentle simmer for poaching eggs.
  4. Crack each egg into a small bowl, then gently slide into simmering water.
  5. Poach for 3-4 minutes until whites are set but yolks are still runny.
  6. Spread mashed avocado generously on toasted bread.
  7. Top each toast with a poached egg, sprinkle with red pepper flakes, salt, and microgreens.

Tips & Notes

Add a splash of vinegar to the poaching water to help the egg whites set faster.
